Title: Apple Gem Jelly

Yield: 1 Cups

2lgRed apples, grated with
  Peel (2 cups)
1 1/2cHoney
1tbLemon juice
1cApple juice
1pk(1 3/4 oz) pectin

: In medium-sized saucepan over medium-high heat, combine apples, honey and lemon juice; bring to a boil. Cook 5 minutes, stirring constantly. In small saucepan over medium-high heat, combine apple juice and pectin; bring to a boil. Stir pectin mixture into first mixture, bring to a boil. Skim off foam; ladle into hot, sterilized 1/2 pint canning jars. Seal according to manufacturer's directions. : Process in a water bath, following accept practises, for 10 minutes. Remove to a wire rack to cool in a draft-free area. Check seals after 12 hours. Store sealed jars in a cool, dark place.
